Green Goddess Halloumi Salad: Fresh, Herby and Buffalo‑Rich
Some salads are simple. And some feel like a full moment, bright, herby, creamy and satisfying in all the right ways. This Green Goddess Halloumi Salad sits firmly in the second category. Crispy golden halloumi (buffalo halloumi, of course) meets a lush, herb‑packed dressing and a bowl full of crisp greens.

Ingredients
For the Salad
250g Quindanning Buffalo Halloumi, sliced
2–3 cups cos lettuce, chopped
1 avocado, sliced
1 small cucumber, ribboned or sliced
½ cup fresh herbs (basil, parsley, chives)
Olive oil, for frying
Salt & pepper
Green Goddess Dressing
½ cup buffalo yoghurt
1 small handful fresh basil
1 small handful parsley
1 tbsp chives
1 clove garlic
Juice of ½ lemon
1–2 tbsp olive oil
Salt & pepper to taste
Method
1. Make the Green Goddess Dressing - Blend buffalo yoghurt, herbs, garlic, lemon juice and olive oil until smooth and vibrant. Season to taste. Adjust with extra lemon or olive oil depending on how tangy or silky you like it.
2. Prep the greens - Place chopped cos lettuce, cucumber and herbs in a large bowl or platter. Add sliced avocado just before serving to keep it fresh.
3. Cook the halloumi - Heat a drizzle of olive oil in a pan over medium heat. Add halloumi slices and cook for 1–2 minutes each side until golden and crisp. Season lightly with pepper.
4. Assemble the salad - Place the warm halloumi on top of the greens. Drizzle generously with Green Goddess dressing. Finish with extra herbs and a squeeze of lemon if you like.
