One-Pan Crispy Buffalo Halloumi,Tomato & Beans

This crispy buffalo halloumi with tomatoes and white beans is the perfect easy weekday dish when you're short on time but craving something fresh, easy and delicious.


Inspired by a New York Times favourite, this version celebrates the rich, creamy halloumi we make right here on our farm in Quindanning. Our halloumi is made from fresh buffalo milk, which is naturally higher in fat and protein, giving it a creamier texture and a gorgeous golden crust when cooked. It stays springy in the centre, crisps at the edges, and brings a richness that balances the acidity of tomatoes and the earthiness of beans.


This recipe is proof that simple ingredients can become something special when the cheese is exceptional.


Ingredients

Serves 4

  • 1 pound cherry or grape tomatoes, halved

  • 2 tbsp olive oil

  • 2 garlic cloves, grated or finely minced

  • 1 tbsp chopped parsley (plus extra for garnish)

  • 1 tsp honey (plus extra to finish)

  • ½ tsp dried oregano or thyme

  • Salt & black pepper

  • 1 can of cannellini beans, drained

  • 1 block Quindanning Buffalo Halloumi, sliced into ¼‑inch pieces

  • ½ lemon

  • Crusty bread, warmed, for serving


Method

1. Build the tomato base

Add the tomatoes, garlic, olive oil, honey, oregano, salt and pepper to a large oven‑safe pan. Cook over medium heat for about 10 minutes, stirring occasionally, until the tomatoes soften and release their juices.


2. Add the beans

Stir in the cannellini beans and cook for another 3 minutes. The mixture should be saucy, fragrant and gently bubbling.


3. Crisp the halloumi

Lay the slices of Quindanning Buffalo Halloumi over the tomato and bean mixture. Transfer the pan to the oven and place under a hot grill/broiler. Watch closely, the halloumi will brown and crisp in just a few minutes.


4. Finish and serve

Remove from the oven and drizzle with a little extra honey. Squeeze over the juice of half a lemon and scatter with fresh parsley. Serve immediately with warm crusty bread for scooping.


Serving Suggestions
  • Add extra tomatoes if you prefer a more saucy, Mediterranean‑style base.

  • Swap cannellini beans for butter beans for a creamier texture.

  • Serve with a simple green salad to round out the meal.

  • For a heartier dinner, pair with grilled chicken or lamb.

  • For breakfast, add a poached egg
