The BEST Buffalo Mozzerella Stuffed Chicken Breast

2 min read

This Buffalo Milk Mozzarella‑Stuffed Chicken Breast is restaurant worthy and the best part is that you can make it easily at home! Using our fresh buffalo milk mozzarella, lovingly made by the team at La Delizia Lattinci, this dish delivers that signature creaminess, gentle richness, and perfect melt that only buffalo milk can create.

Ingredients
  • 2 large chicken breasts

  • 1 ball Quindanning Buffalo Mozzarella, sliced or torn

  • 1 cup fresh spinach, roughly chopped

  • 1 tbsp olive oil

  • 1 tsp garlic powder or 1 clove fresh garlic, minced

  • Salt & cracked black pepper

  • Fresh basil or parsley, to serve

  • Optional: a spoonful of pesto for extra flavour

Method
  1. Prepare the chicken - Place each chicken breast on a board and carefully slice a pocket into the side. Don’t cut all the way through; you just want enough space to tuck in the filling.

  2. Stuff with buffalo goodness - Add buffalo mozzarella and chopped spinach into each pocket. If you’re using pesto, spread a small spoonful inside. Season with salt and pepper.

  3. Seal and season - Use toothpicks to secure the opening if needed. Rub the outside of each breast with olive oil, garlic, salt and pepper.

  4. Sear for flavour - Heat a pan over medium‑high heat and sear the chicken for 2–3 minutes per side until golden. This step adds flavour and helps lock in moisture.

  5. Bake until juicy - Transfer the chicken to a baking dish and bake at 180°C for 15–20 minutes, or until cooked through and the mozzarella is beautifully melted.

  6. Finish and serve - Rest for a few minutes, then slice to reveal that creamy buffalo‑mozzarella centre. Top with fresh herbs and serve with greens, roasted veggies, or a simple salad.

Serving Suggestions
  • Pair with roasted cherry tomatoes and basil for a caprese‑style twist.

  • Serve over pasta with a light olive oil and lemon dressing.

  • Add a side of crusty bread to soak up the melted mozzarella.
