One‑Pot Buffalo Milk Alfredo: Creamy Comfort Made Simple

There’s something undeniably comforting about a bowl of homemade Alfredo pasta, especially when it’s made with fresh, creamy buffalo milk straight from our family dairy.



This one‑pot recipe is all about ease, flavour, and letting the natural richness of buffalo milk shine. With its higher butterfat and velvety texture, buffalo milk transforms a classic Alfredo into something much more indulgent.


Ingredients

  • 2 cups Quindanning Buffalo Milk

  • 300 g fettuccine or linguine

  • 2 tbsp butter

  • 3 cloves garlic, finely minced

  • 1 cup hot vegetable or chicken stock

  • 1 cup freshly grated parmesan (plus extra to serve)

  • 2 chicken breasts, sliced into thin strips

  • Salt and cracked black pepper

  • Fresh parsley, chopped (optional)

  • Lemon zest (optional, but lovely)


Method

  1. Cook the chicken

Heat a large pot over medium heat and melt the butter. Add the sliced chicken and cook until lightly golden and just cooked through. Season with salt and pepper. Remove the chicken and set it aside; you’ll add it back later.


  1. Sauté the garlic

In the same pot, add a touch more butter if needed and sauté the garlic until fragrant and lightly golden.


  1. Add the pasta

Place the dry pasta straight into the pot. Pour in the hot stock and buffalo milk, ensuring the pasta is mostly submerged.


  1. Simmer gently

Bring to a soft simmer and cook for 10–12 minutes, stirring occasionally. The pasta will absorb the liquid and naturally thicken the sauce.


  1. Add the chicken back in

Once the pasta is al dente, return the cooked chicken to the pot and stir through.


  1. Create the Alfredo creaminess

Add the parmesan and stir until melted and silky. Season generously with salt and cracked pepper. If the sauce becomes too thick, add a splash more buffalo milk.


  1. Finish and serve

Let the pasta rest for 2 minutes off the heat; it becomes even creamier. Top with extra parmesan, fresh parsley, and a hint of lemon zest.


Serving Suggestions
  • Add peas or spinach for colour and freshness.

  • Swap chicken for prawns for a lighter twist.

  • Serve with crusty bread to soak up every last drop of sauce.
