Summer Buffalo Mozzarella Burgers: A Creamy, Smoky Twist on a Classic

Summer BBQs are all about simple food done well, fresh ingredients, big flavours, and that perfect balance of smoky, creamy, crunchy goodness. This burger brings all of that together with one delicious upgrade: buffalo mozzarella.


Forget cheddar. Buffalo mozzarella melts more smoothly, stretches further, and adds a rich, silky finish that turns a backyard burger into something seriously special. Paired with crispy bacon, tangy pickles, and a cool ranch-style sauce, this is the kind of burger you’ll want on repeat all summer long.


Ingredients (Serves 4)
  • 4 beef patties (or plant-based patties)

  • 4 slices or rounds of buffalo mozzarella

  • 4 burger buns, lightly toasted

  • 4–8 slices of crispy bacon

  • Pickles, sliced

  • Ranch sauce or any creamy burger sauce

  • Crisp lettuce or rocket

  • Olive oil

  • Salt & pepper


Method
1. Heat the BBQ

Preheat your BBQ or grill pan to medium‑high. Brush lightly with olive oil.

2. Cook the bacon

Lay your bacon on the BBQ and cook until crispy. Set aside on paper towel to soak up excess fat.

3. Season and cook the patties

Season patties generously with salt and pepper.  

Cook for 3–4 minutes per side, depending on your preferred doneness.

4. Add the buffalo mozzarella

During the final minute of cooking, place a slice of buffalo mozzarella on each patty.  

Close the BBQ lid (or cover your pan) to help it melt.

5. Toast the buns

Lightly toast your burger buns on the grill until golden.

6. Build your burger
7. Serve immediately
